I enjoy cooking simple and quick dishes. Often times, I am in a hurry to make a quick lunch for my husband and me and this dish is one of those easy dishes that you can make in about 20 minutes. Did I mention it’s vegetarian? I love noodles!
ingredients: egg noodles, canned green peas, broccolini, soy vinaigrette, eggs (optional)
1. prepare the soy vinaigrette. Mix 3 tablespoons of soy sauce, 2 teaspoons of apple cider vinegar, 1/4 teaspoon ginger and garlic, pinch of red pepper flakes, and a little sesame oil
2. prep the vegetables. I used broccolini and canned peas today but you can also add bell peppers, onions, snow peas, carrots, etc. drain the canned peas if you are using them
3. lightly steam the broccolini and start cooking the egg noodles
4. after the egg noodles are all cooked, drain and add all the ingredients together. stir fry on medium low heat
5. add a fried egg on top!
